Cooking school, the Reverie way
From $3,200
7 days, 6 nights, infinite possibilities
A casual lil food retreat where everyone’s the chef! Led by Paul Albert, fermentation master and classically-trained chef gone rogue. The most fun you’ll ever have!
Glad you asked. Imagine if all of your friends got together for a week in a château in France to have dinner parties, play games, get goofy and have fun…except you don’t know all of the friends just yet. That’s us. A way to experience the incredibly rich culinary life in France and really connect with the people and places around you in an intense and meaningful way - over cooking, playing and washing up!
Everyone’s the Chef: You cook with strangers. You become friends. You bond over whether to roast the beautiful summer carrots or serve them raw. We’ll provide the recipe and a dose of professional guidance, you’ll provide the hands and the heart. And don’t worry - our favorite Michelin-trained chef and fermentation expert, Paul Albert, will be there to guide you all the way through.
Everyone Does the Dishes: There shall be no "staff." There’s just… us. Together. Wearing aprons. Washing plates. Maybe singing, maybe dancing. Maybe not. We’ll all take dish shifts and with the power of team spirit (and some commercial dishwashers!) we’ll knock ‘em out in no time. Gloves and tunes provided!
Add on adventures: In an effort to keep the price tag down in the Rêveroo world, we’ll give you the option of how much or how little you choose to leave your château home. Transportation to and from the airport is included, as well as a ride into the city for your big day out! Beyond that, if you’d like to rent a car to get around, you’re more than welcome to. Or, reserve a spot for one of our scheduled excursions to add some pizazz. Choose your own adventure!
meet your reveroo guide, paul albert!
Bonjour!
Paul is one of those instant-friend kind of humans. Always smiling, always interested, and so generous with his kindness and his knowledge. You’ll feel instantly at ease with him as your teacher and very soon, you’ll understand how lucky you are to have met him!
In addition to your dinner cooking intensives, Paul will host three dedicated workshops during your week with Rêveroo:
Fermentation 101 - a jumpstart for the week where you’ll learn the basics of all things that ferment (there’s way more than you think!)
Sourdough Bread - Paul has traveled the world baking sourdough bread and has a true understanding of the craft! A real treat awaits!
Natural Cheesemaking - After learning how to make over 100 different kinds of cheese, Paul started teaching classes in Poland and now teaches literally all of the world. We’re so excited to have a class with him during this trip!
And aside from these dedicated workshops, when you’re on dinner duty, Paul will be your guide! He’ll walk you through recipes, techniques, and secrets to taking your cooking to the next level. We can’t wait!!

Dinner on your first night is not included, but we’ll have plenty of suggestions of where to eat (or how to order in if you’re jetlag sleepy!). all while soaking in the lively atmosphere that Toulouse is known for. Your culinary adventure is just beginning!
DAY two

After enjoying a French breakfast at the Hotel, our drivers will escort you to your dream home for the week - the Château de Labusquière. Our team will greet you and usher you to your rooms, and then the fun begins! Paul will prepare your first lunch spread for you with empanadas, summer salads, refreshing tomato gazpacho and a chocolate olive oil cake you’ll need the recipe for. After lunch, Team A is up to bat on dish duty, and then Paul will show anyone who’s interested how to build a fresh pork terrine. Then you’re off to school with Paul Albert for his Fermentation 101 class, where you’ll learn all about making Kombucha, Kvass, Hydromel, and kimchi! When class is out, Team C will head into the kitchen to help with dinner prep. On the menu for night one - slow-cooked lamb, grilled zucchini with a hazelnut arugula pistou, and so much MORE!! Your cooking education is well underway! And Team B - it’s your turn to have a dish party. Let’s dance!
DAY three
WEDNESDAY 6.17.26
The Reveroo angels will take care of getting a delicious breakfast out for you, and once you’ve fueled up, it’s back to school with Paul! This time, you’ll focus on all things sourdough. Paul will show you how to make a simple wheat loaf, a hearty Einkorn loaf which you’ll eat at dinner, and sourdough pizza dough! When class ends, Team B will head into the kitchen to prepare a simple lunch of salads and classic Quiche Lorraine and we’ll sit down to debrief how we’re going to take care of our sourdough starters! After Team C takes care of the dishes, you’ll have some free time before Team A joins Paul for dinner prep. Tonight, you’re learning how to filet a whole fish!! You’ll also learn to make a proper beurre blanc (the yummiest of sauces!), ratatouille, and a true French classic - cherry clafoutis. After we feast, it’s a collaborative dish party so we can get to the good part - digestifs and goofy games!

All kinds of cheeses, charcuterie, fresh fruits and crispy veg to complete our snacking lunch prepared by Team C! If you choose not to join, you’ll have the morning to relax at the Château, sipping in the warm June sunshine, or you can join Paul in the kitchen to learn how to make a foie gras terrine. After lunch, Team A will clean up, and you’ll spend the afternoon in school with Paul, your natural cheese-making professor! In this workshop, you’ll learn about making skyr, fresh yogurt, sour cream, homemade butter, and mozzarella! In the evening, we’ll take those cheeses and we’ll take your sourdough pizza dough and we’ll all make pizza together while singing and dancing and…who knows? Karaoke?
DAY five
FRIDAY 6.19.26
This is our official Big Day Out in the great, beautiful city of Toulouse! After breakfast, we’ll load up in the vans and head into one of our favorite cities in France. There are so many historic, culinary, and cultural joys to find in Toulouse - it’s quite the city to discover. After you’ve had the day to wander the streets, we’ll head back to the château in time for Team C to jump in the kitchen for dinner prep with Paul. Tonight’s menu includes learning to break down a whole duck! He’ll also let you in on how to make his famous brown butter potato purée and his unforgettable snap pea salad. You’ll never want to leave!

Team A will be in the kitchen for lunch prep, where we’ll make some delicious French-style sandwiches and salads. Team B will clean up in the kitchen, and then Team C will join Paul to help prepare the final Reveroo dinner - Foie gras with cherry chutney, fresh oysters, ceviche with ponzu sauce, roasted eggplants with warm hummus, duck breasts, and double chocolate ice cream with beignets. What a menu! What a week!!

Bon voyage!

If you arrive before or after the scheduled pickup, the airport is a short 20 minute drive from the city and you can easily catch a taxi or an Uber to the Grand Hotel de l’Opéra. BY CAR
If you’re the seasoned-traveler type and you’d enjoy having your own transportation, then please - rent a car in Paris and drive down! Have a stopover in the region of Dordogne for a foie gras tartine and make a pitstop for the wild view of the old cliffside city in Rocamadour. You could then keep your car for the week and choose your own destiny, or drop off at the Toulouse airport on the first day of the retreat and we’ll come grab you.
BY TRAIN
Trains are another option for those who feel comfortable traveling around on their own! Please note that if you take the train to the Toulouse Matabiau train station, our scheduled pickup will not be available for a hotel transfer. You can either grab a taxi or walk to the Grand Hôtel de l’Opéra - a 20-minute walk.
