We’re laid-back folks who take one thing seriously: amazing food and drinks. We can’t wait to share the fun and flavors with you on a future Rêverie adventure. Who is behind Rêverie?

Julie Belcher

Julie Belcher, co-founder of Reverie, is a true bread adventurer whose journey reads like a delicious travelogue. In her early twenties, while juggling life as a barista and French teacher in Nashville, Tennessee, she taught herself to bake sourdough bread in her home kitchen. When she realized her passion for bread was more than just a hobby, she packed her bags and headed to France to learn from the best.

Her travels took her all over, apprenticing with bakers both here and abroad, until she landed in Angers at La Boulangerie des Carmes apprenticing under Richard Ruan. This would become her beloved culinary home for several years. Julie’s life was anything but ordinary—combining the creativity of a touring musician with the craft of baking, she traveled the French countryside between gigs, soaking up flavors and friendships, and tasting the rich wines that France is famous for.

After five years on this wild and wonderful troubadour path, Julie returned to Nashville and launched Miette Nashville, a private sourdough workshop business that blossomed into a micro bakery. But the call of France’s food culture never faded. In 2019, she co-founded Reverie to share the magic of French cuisine and the joy of learning in a warm, communal kitchen.

Now, Julie has made her way back to France and is settled in Toulouse with her husband Conor, their two kiddos, and Mochi, their neighborhood-famous cutie patootie dog.

About Our Retreats

  • We connect with local experts and artisans who invite you, as a guest to their region, to enjoy the best of the best.

  • We work hard to balance the schedule for optimal fun and relaxation.

  • The number of people in attendance depends on the size of each château. However, we specifically design these retreats to be small and manageable for all and do not accept more than twenty guests no matter our ability to house them. Typically, we have an attendance of 15-18 guests. 

  • We invite specialists in regions and technique to join us for the ride.

  • We encourage guest participation based on want and do not pressure attendance at any given scheduled event, including workshops. Typically, though, people are eager to attend and participate!

  • The kitchen is always open, and you’re coming to join us anytime! We view the week as one big dinner party, so come hang with the team - be our guest!
